Carrot, Ginger, Curry Soup

Ingredients

3 T butter

2 T olive oil

6 cloves of garlic, chopped

1 med onion, chopped

2 bundles of carrots (approx 14 sticks)

6 cups chicken stock

2 T curry powder

1/2 t ground cayenne pepper

½ t ground ginger

kosher salt

1/4 cup sour cream

Directions

Preheat medium pot over medium high heat. Add olive oil, butter, onions, garlic and carrots and saute 5-7 minutes. Add 4 cups chicken stock, curry, ginger and cayenne, and heavy sprinkle of kosher salt to the pot. Bring to a boil, cover and cook until carrots are very tender, about 15 minutes.

Take soup and in batches put in food processor. Then pour soup in pot again add remainder chicken stock, to achieve desired consistency and cook on low heat.

Stir in 1/4 cup of sour cream. :)

Place 1/2 cup of  sour cream in plastic baggy  to swirl on top of soup drag toothpick in it to create design. serve hot.

 

Caliente Chicken Sandwich

Chicken

Ingredients

2 large chicken breast (sliced)

1 large lime

frank's hot sauce

kosher salt

ground pepper

1 c of flour

2 T butter

Directions

Marinate chicken in lime, doused in frank's hot sauce, 2 T olive oil, and sprinkled in salt. Marinate for 15-20 min.

In shallow bowl combine flour, salt and pepper. Place marinated chicken in flour mixture and shake off excess flour. Heat up oil large skillet over med-high heat then place butter. Test chicken by placing portion in skillet if it sizzles its ready. Cook chicken 1-2 min on each side till its golden brown.

Kale

Ingredients

bundle of kale (cleaned and dried) remove stem

olive oil

large lemon

salt

Direction

In a bowl, drizzle olive oil over kale and squeeze lemon add some salt and mix. Let sit while cooking chicken. You want it to be marinated a bit.

Cilantro Aioli

Ingredients

1 Lemon

2 T Lemon infused olive oil

2 t dried cilantro

1 c Mayo

Directions

Mix all ingredients and chill.

Assemble Sandwich

Cut ciabatta bread in half drizzle with olive oil and toast bread, spread with aioli, place kale and chicken on bread.

Voila` A perfect and delicious sandwich.

 

To food style this dish

Cut sandwiches at an angle (pic as guide) Use real wood slices as plates and place sandwiches on there laying one flat and the other half is leaning against it on an angle. For the soup, mini wooden bowls are always fun but if you go with a color bowl stick to the green bowls  (you want the beautiful color of carrot soup to pop so if you don't go earthy go green).  *I prefer not to use yellow or orange bowls because it will make the soup look boring and uninteresting. Serve with a beautiful antique silver spoon.
